General Description/History: Fenugreek is a herb native to southern Europe and Asia. Its thin oval leaves are mildly bitter and are eaten as a vegetable throughout India. Fenugreek is often shredded and added to batter or dough for dumplings or pancakes or can be cooked as spinach and combined with bland vegetables such as potato and cauliflower. The hard seeds of the fenugreek plant are an essential ingredient in Indian curry powders and Yemenite relishes.
Seeds and dried leaves are available all year. Fresh leaves are available in spring to late summer.
