Peter Wright
My career started as Apprentice Chef in 1980, I fine-tuned my craft in the 1980’s in some of Melbourne’s finest hotels such as Melbourne Hilton on the Park and the then Menzies at Rialto before moving into the catering arena.
I have worked for Spotless Services Australia Limited for over 15 years and am currently the Kitchen Operations Manager for Venues Events and Functions.
Management of the food program for Australia’s largest catering company has included many highlights, the greatest being the food program project manager for the Sydney Olympics Athletes and Media Village project culminating in the serving of over 1.5 million meals over a 90 day period. This led me to the Manchester Commonwealth Games in 2002 to manage the food contract at the Athletes and Technical Officials Villages.
In addition I have been involved in most out door sporting events throughout Australia including the Grand Prix, Indy Car Gold Coast & Clipsal 500 in Adelaide.
I have spent a great deal of time developing menus and systems to fit all facets of the food services division from kitchen design, ingredient sourcing to the final plate presentation. My passion for innovative food solutions, and kitchen design has created great opportunities including design roles in the building of the Southern Stand at the MCG in 1992, 2 years in Hong Kong developing a cook chill centre, the building of Telstra Dome, the Athletes Village for Sydney Olympics and Melbourne Commonwealth games, dining facilities for Davis Station in Antarctica and the new development for the Melbourne Cricket Ground.
Through my continuous commitment to innovation and a passion for excellence has driven me over many years to participate in culinary adventures (cooking competitions). Which has given me the opportunity to become the National President of the Australian Culinary Federation supporting all chefs in Australia. My ambition is to support the federation to increase our profile and membership throughout Australia. To influence our government to make the right decision for educating the next generation of chefs and to invigorate the culinary arena in Australia offering chefs the opportunity for development of their craft.
