Winter Fruit Cup

Layers of the best of winter fruits with a juicy syrup.

Ingredients

 
 

250 grams grapes
250grams pineapple
1 orange
1 mandarin
1 sprig mint
½ cup sugar
½ cup water

 
 

Method

 
 

• Place sugar and water in saucepan and bring to the boil, stirring occasional ( you can add a splash of brandy or sambuca if you desire)
• Simmer until all sugar is dissolved and liquid starts to thicken, remove from heat and chill
• Pick and wash grapes
• Peel pineapple, remove core and dice flesh into 2cm dice
• Peel and segment orange removing all seeds and pith
• Peel and segment mandarin removing all seeds and pith
• Wash, pick and shred mint
• Place fruit and mint in serving bowl or glass and pour over sugar syrup
