Summer Pizzas
Pizzas are a great stand by for casual summer eating, and making individual pizzas allows everyone to use their favourite ingredients for the topping.

Ingredients |

6 mini pizza bases, individual pita breads or English-style muffins
2 tbsp tomato paste or pesto
2 tomatoes, sliced
1 small capsicum, sliced
Handful of baby spinach leaves, sliced
1/2 cup grated cheese
1/4 red or white onion, sliced
2 tbsp pine nuts
Chopped fresh basil, chives or parsley |

Method |

1. Preheat oven to 210°C.
2. Spread mini pizza bases (or individual pita breads or English-style muffins) with tomato paste or pesto.
3. Top with tomato, capsicum, baby spinach leaves, cheese, onion, pine nuts and herbs.
4. Bake until lightly browned in pre-heated oven at 210°C, about 15 minutes.
Tips:
· Mini pizza bases are available from larger supermarkets.
· Use any type of prepared pesto such as basil or sun-dried tomato
· Scatter some sliced olives over before baking.
· If you don't have fresh basil, chives or parsley, replace with a small amount of dried herbs such as oregano or rosemary.
