The Department of Hospitality at NMIT trains at all levels for the food industry providing specialist training facilities and skilled trainers to offer a range of opportunities for developing culinary skills. Preparatory courses such as the pre-apprenticeship program are suitable for early school leavers. Short courses are also on offer for those with a more casual approach to cookery.

The apprenticeship program is the traditional way for students to pursue the cookery profession. Apprentices trained at NMIT are working at all levels throughout the hospitality industry and demonstrate excellence through their success at culinary competitions. Patisserie is an expanding trade and NMIT trains both apprentices and also qualified cooks who wish to expand their expertise in this area. For people wishing to change careers to cookery, part-time study of the Certificate II in Hospitality (Kitchen Operations) provides one avenue. The Certificate III in Hospitality (Catering Operations) is another alternative.   This 6-month full-time course equips participants with the skills necessary to become a cook. For those that can commit an entire year, the Certificate III in Hospitality (Commercial Cookery) provides more in-depth training that can lead to a career as a professional.
